Our History
A family run, diversified farm in the Catskills. Brothers Matthew and Micah built the first section of their sap house in 2008 while still in their teens. They have continued to build and expand, and currently have 3,000 taps.

Grading Standards
A standard international grading system was proposed by the International Maple Syrup Institute to help unite maple syrup producers, packers, distributors and consumers. The goal was to adopt a sytem which will better meet the regulatiory and marketing needs of both the commercial maple syrup industrty and consumers for the 21st century. The proposal took place January 1, 2015. This includes All of the United States and Canada.
Golden Color Delicate Taste
This is the product of choice for consumers preferring a lighter colored maple syrup with a delicate or mild taste.

Amber Color Rich Taste
This is the product of choice for consumers preferring full-body tasting syrup of medium taste intensity.
- Previously Medium Amber
Dark Color Robust Taste
This is the product of choice for consumers preferring a darker colored syrup with substantial or robust taste.
- Previously Dark Amber
Very Dark Color Strong Taste
This grade is generally recommended for cooking purposes however some consumers prefer it for table use.
